Cheesy Encounters


I hate to waste food and get bored to have the same type of food repeatedly...well... who doesn't?
I had no clue what I was going to do with the remaining paneer butter masala but I was keen on creating a dish with a difference.I checked the fridge for alternate ingredients and started working on them.I ended up with a dish that was very appetizing and scrumptious....and that is the story of the origin of Cheesy Encounters.

This recipe serves 1.

INGREDIENTS

egg(medium) - 2
milk - 4 tbsp
tortilla(fajita size) - 1
onion(finely chopped) - 2 tbsp
Green chillies and cilantro(finely chopped)- 1 tbsp
Spring onions(optional)- 1 tbsp finely chopped
Shredded cheese(I use shredded Mexican four cheese) - 1/2 cup
Cheese singles - 1 slice
Tomato ketchup or salsa(optional) - 1 tbsp
Pepper and salt - to taste
Cooking spray or oil(1 tsp)
left over gravy or any cooked veggies for filling - 4 to 5 tbsp


METHOD

1)Beat the egg with a fork or an egg beater.Add the onions,green chillies,ketchup,spring onions,salt,pepper and milk and beat well.Divide the mixture into 2 parts.

2)Grease a flat skillet(this skillet should be at least two sizes bigger than the tortilla) with cooking spray or use 1/2 tsp of oil to coat the skillet.Heat to medium heat and pour in half of the egg mixture to make an omelet.

3)When the omelet starts cooking,place a tortilla in the center of the omelet and press very slightly to set the tortilla into the omelet.Then pour the remaining egg mixture all over the tortilla and cook for 40 seconds.




5)Bring the heat to low.Sprinkle shredded cheese all over the omelet-tortilla combo.Then place the gravy or vegetable filling in the combo in such a way that the filling is contained within the center of the tortilla,You may add salt and pepper to the vegetable filling if desired.If you are using the gravy which is already spiced up ,you need not add more seasoning to it.Then add a little shredded cheese on the gravy or filling.


6)Now turn in one side of the egg combo over the filling.Then flip the other side over it.You can use bits of cheese singles to paste the layers one over another.Repeat the same with the two ends of the egg combo and seal it using the cheese singles' bits.





7)Press gently using a spatula on all four sides of the combo until the cheese melts to seal all sides.Switch off the heat and let this cool for at least 5 minutes or until cheese solidifies.Here comes the tricky part.Carefully flip the roll over,bringing the sealed side down.





8)Serve hot with ketchup and chips.


This is a very tasty and filling meal.

Every time I make any gravy items,the next day's lunch is definitely "Cheesy Encounters".

My husband and I love this dish so much that I always make a little extra gravy so that we can indulge in "Cheesy Encounters".

Paneer butter masala




I am starting off with one of our favorite vegetarian dishes - Paneer butter masala. We love to have it with flour tortillas. You can also have it with Naan or Roti.

The following recipe serves 2 to 3.

INGREDIENTS

Paneer - 15 to 20 pieces (cubed)
Onion - 1 (large)
Tomato - 1 (medium size)
Ginger Garlic paste - 1 tbsp
Green Chillies - 1 (to taste)
Chilly powder - 1 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Turmeric powder - a pinch
Cumin seeds - 1/2 tsp
Garam Masala powder - 1 tsp
Kasturi Methi (dried Fenugreek leaves) - 1 tbsp
Fresh Cream (or Regular half and half) - 3 tbsp
Coriander leaves - 5 sprigs
Tomato ketchup - 1 tbsp (optional)
Whole Garam Masala (Cardamom -1, Cloves-3, Cinnamon stick - 1.5 inch)
Oil - 2 tbsp
Food color(orange/red) - a pinch(optional)
Butter - 1 tbsp
Salt - to taste

METHOD

1) Heat the oil in a pan and add the chopped onions. Then add turmeric powder. Cook the onions until they become translucent. Add salt to the onions to cook them faster.

2) Add Ginger garlic paste and green chillies and cook till the raw smell disappears.

3) Now add the chopped tomatoes, chilly powder, coriander powder and cumin powder and cook for 5 minutes.

4) Remove the pan from the heat and let it cool for 5 minutes. Then grind the mixture in a blender to a paste. Let the mixture cool.

5) In the same pan, add the butter and fry the whole Garam masala and the cumin seeds.

6) Add the blended mixture to the pan. Now add the paneer cubes to the mixture and cook for 5 minutes in medium flame.Use milk instead of water to dilute the gravy,this will make the gravy rich. In the meantime, crush the kasturi methi leaves in your palm, add it to the gravy and mix. This will give a very nice buttery flavor to your gravy.

7) Add the fresh cream and ketchup (this gives a nice tang to the gravy) and stir. Then add the garam masala and mix well.Mix the food color with a tsp of milk and add it to the gravy.

8) Garnish with chopped coriander leaves and serve.

You can also add in green peas instead of the paneer in step 6 to make peas masala.

To make Mutter Paneer Masala, add both the paneer cubes and green peas in step 6.

I use frozen green peas.

We enjoyed this dish and there was some gravy left out. I figured out a way to turn the leftover into a yummy meal, which I named Cheesy encounters (yeah...the name of this blog was inspired by this dish).
